We prepare everything onsite and cook many dishes over an open flame, highlighting the ingredients' authentic flavors from the Mediterranean roots of rotisserie, grilling and open-hearth cooking.

The team is dedicated and understands all aspects of front and back of house in order to execute a flawless event. Morgan Robinson, Chef/Owner

Morgan Robinson has more than 25 years of culinary experience at locations including The Ritz Carlton/Aspen, Bistro Don Giovanni, Domaine Chandon, Cakebread Wine Cellars and Franciscan Estates. 

Morgan grew up in Santa Barbara with a fascination for the Santa Maria grills and their live fire cooking versatility. He was later inspired by Alice Waters at Chez Panisse and her use of a hearth and wood-fired oven.  To expand his repertoire, Morgan traveled extensively through South America and studied the Gaucho style of cooking. All these early experiences and his love of open fire led him to start SMOKE, his successful Napa-based catering company. He eventually acquired a catering kitchen with a wood-burning oven and commissioned a large mobile grill to use onsite at large events. Through his experimentation and skill, Morgan has mastered the many ways smoke and fire can be infused into ingredients. These methods, along with classic cooking techniques, provide Morgan with a tremendous amount of flexibility in creating adventurous and unique culinary experiences.

Morgan's years as a winery chef and unique style have made him a versatile and knowledgeable chef who deeply understands food and is passionate about sourcing and procuring the highest quality ingredients. His years in the Napa Valley and many relationships in the wine industry have also supported him in developing an exceptional wine-pairing expertise. Morgan is as comfortable doing the Napa Valley Film Festival gala, as he is an elegant dinner at a private home. Morgan can be found cooking for Napa Valley Grape Growers Annual STOMP, BottleRock music festival, wine education seminars, and Yountville Live, as well as numerous winery release events and harvest parties.

In April, 2016, Morgan and Irma, will be opening Southside, a cafe in Napa, CA. Focusing on specialty coffee, food, beer & wine, Southside will be open daily and will highlight special dinners throughout each season.

Irma Robinson, Owner

A born planner and idea girl, Irma manages many aspects of her businesses with a focus on marketing and events.

Irma was born in the Bay Area to Mexican immigrants. Her family was brought together by a home filled with music, laughter and good Mexican food. Irma’s strong roots keep her passion tied to all things Latin-inspired.

In the late 90’s Irma moved to Melbourne, Australia where her passion for food and wine truly began. After an extended trip in Spain, Irma relocated to Napa in 2001. As if meant to be she met her now husband Morgan Robinson on her first day at work on a temporary assignment at Cakebread Cellars. Irma went on to marketing and management positions with wineries including Domain Chandon, Darioush, and Quintessa. Through a shared passion Irma and Morgan started businesses to compliment their lifestyle after traveling to Europe and South American where food and wine were at the forefront of their visits. They started TasteVino Selections (Wine Club for Unique Wines from South America) in 2008 and SMOKE Open Fire, a catering company focusing on exceptional food inspired by fire, in 2006. In 2016, Irma and Morgan opened Southside, a café and coffee bar in Napa.

When not running her food businesses, Irma can be found running the business of her family, 12 year-old Ariana Alma, 9 year-old Francisco David, and their dog Orion.
