Commissary Sous Chef
As directed by commissary chef, supports culinary and baking/pastry production for all Southside cafes, consistently executing all items according to demonstrated standards.
Contributes to large-scale prep for SMOKE, in collaboration with head event chef
Provides culinary assistance at SMOKE catering events as scheduled
Works with commissary prep team to track prep inventory and maintain prep pars.
With direction from the head event chef, prep items for SMOKE Open Fire Cooking catering events
Label, stock and organize all items so that they are easily accessible
Assist with Southside cafe catering prep as needed
Support all culinary functions for SMOKE Open Fire Cooking events and catering.
Collaborate with other event chefs to ensure a successful event and guest experience, in support of SMOKE Open Fire Cooking mission, vision and values.
Load and unload vehicles with all food and equipment items needed for SMOKE events and catering.
Set up and break down kitchen and culinary equipment at the event site; clean and restore site to normal after event has concluded.
3+years chef experience required
Work with SMOKE catering managers to complete set up, execution and breakdown for all events.
Maintain professional service standards
Supervise service staff during set up, service and breakdown of events to ensure an exceptional guest experience
Ensure exceptional guest satisfaction during events, ie. working with client, greeting guests, seating, identifying VIPs and coordinating special requests and dietary restrictions.
2+years service experience required
Warmly greet and interact with guests, providing exceptional customer service at each step
With direction from event captain and catering managers, set up and break down event site
Serve food and beverages according to established SMOKE service standards
Bus dishes and maintain cleanliness throughout the event to ensure that the site is clean and tidy.
Be a valued member of the team with enthusiasm, professionalism and a can-do attitude
1+year service experience required
Ensure the availability of clean equipment by washing, sanitizing and putting away pots, pans, dishes, glassware, flatware and other equipment in a timely and organized manner
Sweep and mop commissary kitchen floors, maintaining cleanliness standards
Empty and clean all trash, recycling, and composting bins
Support the fast-paced commissary kitchen team by being dedicated and organized
