One evening we had a group of friends over, one of whom was a vegetarian. I looked for inspiration out of the box – specifically, a produce box we used to order from a local farm – and came up with the above dish, using just six simple, fresh ingredients. Eggs and asparagus are a classic Italian pairing. Aged cheese and meat contrast with fresh vegetables for a nice balance (yin and yang). When I added the poached egg on top just before serving, I could almost taste the richness of the yolk, tying together all the flavors.
